Cuisine
The cuisine of Osteria-Enoteca Giorgione is based on the freshness of its products, carefully selected every morning at the Rialto market by managers Paolo and Dario. The products are then passed on to Fabio, the chef, who with his experience and skill turns them into excellent, original dishes.
The classic Venetian cuisine, based mainly on fish but also on the flavours of the vegetables grown in the lagoon’s gardens, is interpreted with a touch of avant-garde by the “Osteria”.
A few of the appetizers served are scampi and pilchards in Saor, thinly sliced raw tuna, squills, lukewarm European lobster salad, a sophisticated crab cake with vegetables, tiny grey shrimp served with yellow polenta, and then there is much more.
Standing out amongst the first courses are gnocchi – strictly homemade – with basil-fragrant scallops, black and yellow tagliatelle with shellfish, and Fabio’s authentic speciality: Rice alla Rivierasca prepared with vegetables and scampi.
The main courses that truly deserve a taste are grilled anglerfish, Greek-style scorpion fish, the fragrant fried fish platters and the classic cuttlefish “in a black sauce”.
For those who don’t care for fish, Dario will recommend a meat or vegetable-based menu.
You can be tempted by the desserts at the end of the meal, if you like. On the menu is the hot chocolate flan with ice cream, Amaretto semifreddo or tiramisu, all soft enough to be eaten with a spoon and that melt in your mouth. When choosing a wine, you can ask for advice without hesitation or glance through the wine list, where you will find a wide selection of Italian labels.
